The ultimate Matcha Pancakes
We do like weekends very much. There is just something special in lazy mornings and the sweet smell of freshly made pancakes. We add a pinch of Green Matcha to our recipe for a little fancy touch of an ordinary weekend. Top with white chocolate chips, honey, butter or banana and enjoy!
Ingredients:
1 cup all-purpose flour
1 tablespoon green tea powder (matcha)
2 teaspoons baking powder
pinch of salt
1 cup cashew/almond/soy/coconut milk
1 egg
2 tablespoons olive oil
2 teaspoons vanilla extract
half banana
Method:
Step 1.
Whisk flour, matcha, baking powder, and salt in a bowl. Make a well in the centre of the mixture; add 1 cup of your choice of milk, egg, olive oil, and vanilla extract. Whisk batter briefly until just combined with some small clumps of flour remaining. Add chocolate chips; stir again briefly (optional)
Step 2.
Grease a small saucepan lightly; heat over medium-low heat. Transfer 2 to 3 spoonfuls of batter onto the centre of the pan, spreading the batter with the back of the spoon. Cook until small bubbles start to rise to the surface and burst, about 1 minute. Flip and cook until edges are lightly golden brown, about 1 minute more.
When ready, top with honey and butter. We use our Linden raw honey to add some really lovely flowery aroma. According to your taste, you can accompany it with fresh fruits, strawberries or bananas; the choice is yours.
