Lavender Honey Marshmallow Recipe – Fluffy, Floral & Fun

Looking for a fun treat to impress your guests or entertain the kids? This Lavender Honey Marshmallow recipe is light, creamy, and full of floral sweetness. It’s made with raw lavender honey, which gives the marshmallows a delicate, aromatic flavour and a healthier twist on the usual sugar-laden versions.

These homemade marshmallows are perfect for desert BBQ nights, kids’ parties, or cosy get-togethers. Once you try this version, you’ll never want to go back to store-bought again!

Sticks of fluffy homemade marshmallows made with lavender honey

Ingredients:

  • 1½ Tbsp halal gelatin powder (or agar-agar for a vegetarian version)

  • ¼ cup cold water + 2 Tbsp

  • ½ cup raw lavender honey

  • 1 Tbsp dried lavender or a few drops of lavender essence (food-grade only)

  • Pinch of salt

  • 1 tsp vanilla extract

How to Make Lavender Honey Marshmallows

Step 1: Bloom the Gelatin

Add the gelatin to ¼ cup of cold water in a stand mixer bowl. Let it bloom while preparing the syrup.

Step 2: Make the Lavender Syrup

Combine the lavender honey, dried lavender (or essence), 2 tablespoons of water, and a pinch of salt in a small saucepan. Bring to a boil and simmer for 2 minutes. If you used dried lavender, strain it out to avoid bitterness.

Step 3: Whip It Up

Turn your mixer on low speed. Slowly drizzle in the hot honey syrup. Gradually increase to high speed and whisk for 5–7 minutes until the mixture becomes white, glossy, and holds its shape, like marshmallow fluff.

Step 4: Set and Slice

Pour the mixture quickly into a lined or greased small pan (or silicone moulds). It sets fast, so don’t delay. Let it rest uncovered at room temperature for 4–6 hours.

Once set, slice with a greased knife. Optionally, sprinkle with crushed dried lavender for extra flair.

Tips for Perfect Lavender Marshmallows

  • Don’t overdo the lavender essence—a few drops go a long way.

  • Swap lavender for citrus or vanilla essence if preferred.

  • These marshmallows are perfect for topping hot cocoa, roasting over a fire, or gifting in homemade treat boxes.

Raw lavender honey not only enhances the flavour but also adds antioxidants and trace minerals—making this recipe as wholesome as it is indulgent.

Serving Tips:

Pair these lavender honey marshmallows with hot chocolate, toast them over a campfire, or gift them in pretty jars. They also make a great addition to summer desserts or fancy drinks.
