Lavender Honey Marshmallow Recipe – Fluffy, Floral & Fun

Ingredients:
1½ Tbsp halal gelatin powder (or agar-agar for a vegetarian version)
¼ cup cold water + 2 Tbsp
½ cup raw lavender honey
1 Tbsp dried lavender or a few drops of lavender essence (food-grade only)
Pinch of salt
1 tsp vanilla extract
How to Make Lavender Honey Marshmallows
Step 1: Bloom the Gelatin
Add the gelatin to ¼ cup of cold water in a stand mixer bowl. Let it bloom while preparing the syrup.
Step 2: Make the Lavender Syrup
Combine the lavender honey, dried lavender (or essence), 2 tablespoons of water, and a pinch of salt in a small saucepan. Bring to a boil and simmer for 2 minutes. If you used dried lavender, strain it out to avoid bitterness.
Step 3: Whip It Up
Turn your mixer on low speed. Slowly drizzle in the hot honey syrup. Gradually increase to high speed and whisk for 5–7 minutes until the mixture becomes white, glossy, and holds its shape, like marshmallow fluff.
Step 4: Set and Slice
Pour the mixture quickly into a lined or greased small pan (or silicone moulds). It sets fast, so don’t delay. Let it rest uncovered at room temperature for 4–6 hours.
Once set, slice with a greased knife. Optionally, sprinkle with crushed dried lavender for extra flair.
