Honey and Cardamom Hot Cross Buns

This Easter, we’re elevating the classic hot cross bun with a delightful twist. Our recipe combines the richness of our finest honey with the aromatic warmth of cardamom, creating a truly irresistible treat. These honey and cardamom-infused hot cross buns are sure to become your new favourite Easter delight!

Ingredients

  • 1 tbsp dried active yeast

  • 10 g white sugar

  • 100 g raw honey (we recommend Wildflowers or Acacia)

  • 375 ml milk

  • 635 g plain flour 

  • 2 tsp mixed spice

  • 2 tsp ground cardamom

  • 50 g unsalted butter

  • 1 egg

  • 240 g sultanas
  • 55 g candied orange peel

  • 80 ml Water

the method

  1. Gently warm the milk and sugar until lukewarm and pour into the bowl of a stand mixer – add the yeast and stir in, leave for 5 min to activate.
  2. Add the honey, flour, spices, butter and egg to the milk mixture and mix on medium speed for 6-7 minutes until the dough is smooth and elastic. In the last minute add in the dried sultanas and peel.

  3. Once the dough is smooth cover the bowl with a teatowel for 1 hour to prove.

  4. After 1 hour divide the dough into 12 equal balls of roughly 110 g each.

  5. Place them on a baking sheet lined with greaseproof paper and leave to rise, uncovered for another hour.

  6. Preheat the oven to 200 C.

  7. In a small bowl combine the flour and water to form a smooth paste and pipe in lines over the buns to form the crosses just before they go in the oven. Bake for 15-20 min. until deep golden brown.

  8. In a small saucepan combine the Acacia honey and orange juice and melt together to form the glaze. When the buns come out of the oven brush them generously with the glaze before they cool down.
