Honey and Cardamom Hot Cross Buns Recipe
Looking for a unique Easter treat? These Honey and Cardamom Hot Cross Buns are a delicious twist on the traditional recipe. Combining the floral sweetness of raw honey with the warm spice of cardamom, this recipe is sure to become a seasonal favourite.
Made with our fragrant Wildflower or Acacia honey, these buns are soft, aromatic, and perfect for springtime baking.

Ingredients
1 tbsp dried active yeast
10 g white sugar
100 g raw honey (we recommend Wildflowers or Acacia)
375 ml milk
635 g plain flourÂ
2 tsp mixed spice
2 tsp ground cardamom
50 g unsalted butter
1 egg
- 240 g sultanas
- 55 g candied orange peel
For the cross:
75 g plain flourÂ
80 ml WaterÂ
For the glaze:
2 tbsp Acacia Honey
Juice of one orange
How to Make Honey and Cardamom Hot Cross Buns
- Gently warm the milk and sugar until lukewarm and pour into the bowl of a stand mixer – add the yeast and stir in, leave for 5 min to activate.
Add the honey, flour, spices, butter and egg to the milk mixture and mix on medium speed for 6-7 minutes until the dough is smooth and elastic. In the last minute add in the dried sultanas and peel.
Once the dough is smooth cover the bowl with a teatowel for 1 hour to prove.
After 1 hour divide the dough into 12 equal balls of roughly 110 g each.
Place them on a baking sheet lined with greaseproof paper and leave to rise, uncovered for another hour.
Preheat the oven to 200 C.
In a small bowl combine the flour and water to form a smooth paste and pipe in lines over the buns to form the crosses just before they go in the oven. Bake for 15-20 min. until deep golden brown.
In a small saucepan combine the Acacia honey and orange juice and melt together to form the glaze. When the buns come out of the oven brush them generously with the glaze before they cool down.
