No Waste Strawberry Chilli Sauce – Recipe

Ingredients:

  • 1kg overripe or bruised strawberries (macerated with 100g sugar or raw honey)

  • 2kg red chillies

  • 1 white onion

  • 100g fresh basil

  • Enough water to cover

  • Salt at 3% of total weight (including water)

Method:

  1. Combine the strawberries, chillies, onion, basil, and water in a container.

  2. Weigh everything (including the water) and add 3% salt based on the total.

  3. Let the mixture ferment for around 10 days at room temperature.

  4. The onions will introduce a natural tang, similar to the effect of vinegar.

  5. After fermentation, strain the liquid and blend the solids until smooth.

  6. Add the strained liquid back gradually until you reach your desired consistency.
